The yield has been less than 2 kg of grapes per vine and the harvest has been done by hand, in small 15kg boxes. in order to respect the fruit as much as possible. Grapes are picked grain by grain on the selection belt.

Development and aging

As soon as the grapes are transferred to the tank, a rapid cooling is applied that allows us to carry out a pre-fermentation maceration for a few days. Afterwards, fermentation begins at a controlled temperature in the same stainless steel tank, performing a slow maceration in order to carry out a gentle extraction of tannins and anthocyanins from the skins. After malolactic fermentation, the wine is aged for 12 months in French (70%), Eastern European (20%) and American (10%) oak barrels of 225 and 500 liters.

Organoleptic characteristics

High-layer cherry red color with a luminous ruby ​​rim that retains a violet, clean and bright tone. On the nose it is intense, where balsamic notes, ripe red fruits, mineral notes and light memories of cedar wood stand out. It presents an elegant evolution reflecting an excellent maturation of the grapes.

On the palate it has a good tannic structure. It is delicate, with a sweet step without any aggressiveness. The end of the mouth is reminiscent of aromas of spices characteristic of Mediterranean lands. It is a wine that can be aged, but when it is released it has already spent an adequate period in the bottle to fully develop its virtues.

Aging potential: 6 to 8 years

Ideal consumption temperature: between 15 and 17ºC
